Hi All, to those interested in this recipe, I made this for our Progressive Dinner Party tonight and I used the smaller burrito shells, they fit in my 9x13 pan best. I'll udpate my original recipe post. Enjoy!

RE: camping with toddlers
All the suggestions above are great, I'll just add mine here as well--here is what we've used/learned:
-rubber boots and rain coats for rainy days are a must, they LOVE to play in the mud puddles after the rain stops. Your camping, let them get wet/dirty and take a camera to capture those moments, they love to look back at when they played in the water puddles
-rubber balls, trucks/tractors to play with in dirt
-Barbies/babies and strollers to push them around in.
-sand shovels and pails and sand toys..can be used at your site and at a beach.
-books - can be read out side by the fire and in the trailer-book reading helps them unwind as well.
-games-candy land, chutes and ladders, puzzles-buy these to keep in the trailer-saves time on repacking.
-blocks are good for the younger one too.
-coloring books, crayons, markers, plain paper.
-a small photo book or a baggie-take them hiking and pick up different colored leaves, pine cones, twigs, etc., stuff they find on the hike and can put them (leaves) in their book or baggie. Helps with the imagination.
-One poster above said to go garage saling and get 'camping' clothes. Someone suggested that to me when I started camping with my little ones. It was the BEST advise, as I have a little boy where dirt finds him. He has ruined many of those camping clothes with mud stains, I do my best to get out what I can, wash them, and put them back in the camper as dirt continues to find him..saves money thats for sure. Always over pack and for different seasons with kids-you just never know how often they'll get wet/dirty or how drastically the weather can change.
-Have wipes on hand in a container for outside use or for cleaning them down at night.
- We do have a portable DVD player, however, they are only using it at night and thats if books doesn't help them unwind.

That seems to be a very small amount. I haven't made this one yet but adding up the volumes seems to indicate about 4 cups of available filling. When I make mine (Tioga George's) I can only fit 8 in the 13" long pan. Maybe you are using the 6" tortillas instead of the 10" that I use.
I apologize, its been a while since I've made the recipe, If I recall correctly, I believe I had the smaller ones on hand. I got the recipe from a girl friend of mine, I'll have to ask her about the size of the shell. Good luck.

I love this one and so do the kids:
Sour Cream Chicken Enchilada's
1 1/2 C Cooked chopped chickend (2lg chix breast)
1 1/2 C shredded cheddar cheese
1/2 C Chopped onion
1 clove garlic minced
2 T margarine
1/2 C sliced ripe olives (drained, optional)
10 3/4 oz can cream of chix soup
1 C sour cream
4oz can chopped green chilies
1/4 C Milk
8 Tortilla's (corn or flour)-the smaller burrito size.
In med. saucepan cook onion and garlic in butter until tender. Stir in 1/3 C olives, soup, 1/2 C Sour Cream, and green chilies and mix well. Reserve 3/4 C of sauce, set aside. Stir Chix and 1/2 C of the cheese into remaining sauce. In a small bowl cobmine reserved 3/4 C of sauce with remaining sour cream and milk, blend well. Spread some of the sauce on the bottom of the ungreased 9x13 pan. Heat tortilla's slightly. Fill each with 1/4C of Chix Mixture. Roll up tortillas and place in pan seam side down. Spoon remaining sauce on top of the tortillas and put remaining cheese and olives on top. (Can freeze at this point if you choose to). Bake at 350 for about 20-30 minutes. Serve with Salsa.

We too ran into that sitaution-we used to book and reserve for people, and in the end, we got stuck with the reservation fees for cancelling. No more, everyone can book on their own if they want to join in. We get together with a huge group of adults on one weekend. Instead of booking for everyone, I give them the dates/campground and the link or the phone number to make the reservation. If they want to join in, they'll make a reservation.

At the MN RV show, we found one that is north of the twin cities, in Askov MN- I believe that was the name of the city. I'll have to check my literature.I can't recall the name of it, but if anyone goes there this year (Its new this year), let us know what its like!

We do something similar but cook it over the grill grate over the fire in a tin foil pan.
steak chunks -thawed
Chicken breast chunks - thawed
sliced potatoes
marinated mushrooms (Sam's club)
Juice from the Marinated mushrooms
Red Bell Peppers- cut into strips
Green Bell Peppers - cut into strips
Onions sliced
Butter - a stick or two (depening on the amount of ingredients)
Spray Tin Pan with PAM, Combine the above, place tin foil over the tin pan, sealing edges, and making vents for steam (either on the corner or poking the top of tin foil with a fork), cook over open fire until meat is done/tender, stirring often. Our original intent with the above ingredients was to make kabobs one night, but decided the foil pan would work great. Its a huge hit and feeds quite a few- we call it our Lazy Man Kabobs :). We even get requests to make it. You can do other ingredients too like Shrimp or whatever.

There is a post under the Hybryd Trailers sectoin about camping games. Some really good suggestions there Too. But we enjoy, Ladder Golf, Card Games such as Uno, or Sequence for kids, or Domino's.
RE: how many 2007 camping trips did you make!!!!
I thought we had done 10 but I went back and recounted-more like 12 trips between Late April and early Oct. Not bad. We weren't home much, but that's okay we had a BLAST!!! Hope Spring comes soon!!!
